Brief history of Champagne
Champagne is considered a luxury drink, and the monk credited with its development was Dom Pierre Pérignon.
Interestingly, Dom Pérignon did not intend to make a sparkling wine; his intention was to make white wine from red grapes.
Dom Pérignon finally managed to produce a great white wine from red grapes, but a small detail emerged, in his white wine bubbles appeared in the bottles. Dom Pérignon did not understand what was happening, in fact he spent most of his life trying to avoid bubbles in the wine.
However, for the English to whom the monks sent white wine, they loved the "bad" version, i.e. they liked the "bubbly" Dom Pérignon wine better than the normal version.
Legend has it that when the monk Dom Pérignon tasted this wine he said to his companions: "Come quickly, I am drinking the stars".
